INS numbers on Indian packs, explained
INSstands for the International Numbering System for food additives, a Codex scheme used on Indian labels so that additives can be named consistently without printing long chemical names. INS 330 is citric acid; INS 211 is sodium benzoate. The European E-numbers are the same scheme with a different prefix, so INS 330 and E330 are the same substance.
A number on a pack means the additive is approved for that use at a permitted level. It does not mean the pack is heavily processed, and it does not by itself mean the food is a poor choice — several of the most common numbers are ordinary acids and salts.
The ones you will actually see
These are the additives that appear most often across the Indian packs we have read, roughly in order of how frequently we found them.
INS 330 — citric acid
An acidity regulator and antioxidant, and the single most common additive we see. Naturally present in citrus; industrially fermented. Uncontroversial.
INS 551 — silicon dioxide
An anti-caking agent that keeps powders and spice mixes pourable. Inert.
INS 500(ii) — sodium bicarbonate
Baking soda, a raising agent. Worth noting for one reason: it is sodium, so it contributes to the sodium row in biscuits and bakery you would never describe as salty. Sodium on Indian labels.
INS 627 and INS 631 — disodium guanylate and disodium inosinate
Flavour enhancers, almost always used as a pair and often alongside yeast extract. They are the usual substitutes on a pack advertising no MSG, because they achieve a similar effect without being INS 621. Both are sodium salts.
INS 211 — sodium benzoate
A preservative used in acidic products: soft drinks, fruit drinks, sauces and pickles. Approved and widely used. It is also sodium.
INS 331 and INS 339 — sodium citrates and sodium phosphates
Acidity regulators and emulsifying salts, common in processed cheese, which is part of why processed cheese carries the sodium it does.
INS 471 and INS 472e — mono- and diglycerides, and their esters
Emulsifiers, used to keep fat and water together in bakery and ice cream. Derived from fats, which for some readers raises a source question the label does not answer.
INS 150a and INS 150d — caramel colours
Colour. 150a is plain caramel; the later classes are made with ammonia or sulphite processes.
INS 950 and INS 951 — acesulfame K and aspartame
High-intensity sweeteners. They appear in sugar-free and zero variants, and they are the reason a zero-sugar drink can taste sweet with no sugar in the table.
INS 319 — TBHQ
An antioxidant that stops frying fat from going rancid, common in packaged fried snacks. Permitted with a defined limit.
How to read a list of them
Three habits get you most of the value:
- Count the sodium ones. 211, 500(ii), 331, 339, 627, 631 are all sodium compounds. A pack with several is carrying sodium beyond the salt.
- Notice the pairs. 627 with 631 usually signals a flavour-enhancer strategy on a pack that avoids 621.
- Treat the length of the list as information about the product, not the danger. A long list usually means a long shelf life and a complex recipe, which is worth knowing on its own.
How additives affect a LabelSaaf score
Less than people expect, and deliberately so. The score is driven by the nutrition table — sugar, sodium, saturated fat, energy against fibre and protein. Additive flags adjust within the band the nutrition already earned; they do not move a pack from one band to another.
The reason is that the nutritional evidence is strong and quantitative while the additive evidence is mostly regulatory and categorical. A rubric that let an additive count push a nutritionally sound pack into a bad band would be asserting more than the label supports. Common questions
Is INS 621 (MSG) harmful?
It is approved by FSSAI and by major regulators internationally, and the classic reports of reactions have not held up well under controlled testing. It is a sodium salt, which is the part a label reader can act on. Packs saying "no MSG" frequently carry 627 and 631 instead.
Are E-numbers and INS numbers different?
Same numbering, different prefix. E211 and INS 211 are both sodium benzoate. Indian packs use INS; imported packs may use E.
Does 'no preservatives' mean no additives?
No. Preservatives are one class. Colours, emulsifiers, acidity regulators, anti-caking agents and flavour enhancers are all additives and none of them is a preservative.
What if an additive is not numbered?
Some are named in words instead — citric acid, annatto, malic acid, artificial flavouring substances. That is permitted and means the same thing.
